Success is guaranteed! Stuffed and baked chicken with garnish: cooking for a banquet and only getting compliments

This dish is an unconditional success. Baked chicken is marinated in a creamy butter sauce and stuffed with apples and dried cranberries. And this incredible combination always impresses guests.

Prepare the oven by preheating it to 200°

Ingredients

  • Whole chicken 2.5 kg
  • Salt, black pepper

For the creamy spread:

  • Butter 150 g at room temperature
  • 1 teaspoon thyme (fresh or dried)
  • 1.5-2 teaspoons of salt
  • 1 tablespoon olive oil
  • 3 tbsp parsley
  • 2 cloves of garlic
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 tablespoon smoked paprika

For the filling:

  • 3-4 slices of sourdough bread
  • Olive oil
  • 1 onion (approx. 80 g)
  • 15 g butter
  • 1-2 tbsp olive oil
  • 1 celery stalk
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon thyme
  • 1 apple
  • 50 g dried cranberries (or raisins)
  • 2-3 handfuls of croutons
  • Fresh parsley

For the garnish:

  • 1 kg of potatoes
  • 1-2 apples
  • 2 peppers
  • 3/4 tablespoon salt
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon dried chives
  • 3 tbsp olive oil
  • 3 tablespoons breadcrumbs

Cooking

Stuffed and baked chicken with garnish
  1. Lightly salt and pepper the prepared chicken.
  2. Prepare the spread. To do this, add all the spices and herbs according to the recipe to the softened butter, as well as pressed garlic, lemon zest and lemon juice, olive oil and finely chopped parsley. Mix everything until smooth.
  3. Separate the skin from the meat with your fingers and a spatula and spread the spread under the skin. Then grease the entire surface of the bird with the remainder. Tie the paws together.
  4. Now take care of the filling. First, grease the diced slices of bread with oil, salt and pepper and dry them in the oven for 10 minutes.
  5. Pour oil into a frying pan and put the butter and fry the finely chopped onion and celery stalk until transparent. Add the herbs from the recipe, then place the peeled and diced apple. Stir in cranberries, croutons and parsley.
  6. Once everything is combined, stuff the chicken with this.
  7. Sprinkle potatoes, apples and peppers, washed and cut into 4-8 pieces, with all the seasonings and salt indicated in the recipe. Drizzle with oil and sprinkle with breadcrumbs. Mix everything, put it in a baking dish. Place the chicken on top. To prevent the wings from burning, wrap them under the carcass.
  8. Bake the dish for 1 hour and 30 minutes.
